Tumis Pare Telor (Non-Bitter Stir-Fried Bitter Melon with Egg)

Egg 1 piece
Garlic 1 clove
Shallots 3 cloves
ABC shrimp paste 1/4 pack
Small chili peppers 5 pieces
Large red chili pepper 1 piece
Sugar To taste
Salt To taste
Ground pepper To taste
Flavor enhancer To taste
Sweet soy sauce A little
Water As needed

Instructions

  1. Prepare the Bitter Melon: Slice the bitter melon into small pieces. Soak the pieces in saltwater for about 5 minutes, then rinse thoroughly. Repeat this process three times to reduce bitterness.

  2. Blanch the Melon: Boil the bitter melon in salted water until it reaches a rolling boil. Afterward, rinse under clean water and drain well.

  3. Make the Spice Paste: Blend the garlic and shallots with the shrimp paste until smooth.

  4. Sauté the Spices: In a pan, heat a little oil and sauté the spice mixture. Add the beaten egg and scramble it gently. Incorporate the sliced small and large chilies, along with sugar, salt, ground pepper, and flavor enhancer.

  5. Combine Ingredients: Add the blanched bitter melon and a splash of water. Stir in a bit of sweet soy sauce.

  6. Taste and Serve: Adjust seasoning as needed, then serve hot.
