Stir-Fried Bitter Melon with Anchovies, Shrimp, and Tempeh

Ingredients

Ingredient Amount
Large bitter melon 1 piece
Anchovies 2 packets
Tempeh 1 block
Shrimp 100 grams
Small onion 1 piece
Garlic cloves 3 cloves
Shallots 4 pieces
Ginger 1 cm
Oyster sauce 2 tablespoons
Large red chili 2 pieces
Bird’s eye chili 10 pieces (for spice lovers)
Sugar To taste
Ground pepper To taste
Salt To taste
Cooking oil 2 tablespoons

Instructions

  1. Begin by slicing the bitter melon in half lengthwise. Remove the white pith and seeds, then cut it into small pieces and rinse under running water. Sprinkle with salt, gently massage, and let it sit for a while.
  2. Slice the small onion, garlic, shallots, and both types of chili. Crush the ginger.
  3. In a pan, heat the cooking oil over medium heat. Sauté the shallots, small onion, garlic, bird’s eye chili, and large red chili until fragrant.
  4. Add the crushed ginger and oyster sauce, stirring to combine.
  5. Introduce the previously prepared bitter melon to the pan. Once it begins to soften, add the shrimp, tempeh, and pre-fried anchovies.
  6. Season with ground pepper, sugar, and salt to taste, and continue to sauté until thoroughly cooked.
  7. Taste and adjust seasoning as necessary, then remove from heat and serve hot.
