Stir-Fried Green Beans with Carrots and Egg

Ingredients:

  • 1 package green beans
  • 2 carrots, julienned and boiled
  • 1 egg
  • 3 red chilies
  • 1 onion
  • 3 cloves garlic
  • 3 shallots
  • Oyster sauce to taste
  • Soy sauce to taste (use less soy sauce if preferred)

Instructions:

  1. Begin by preparing the aromatics: thinly slice the red chilies, onion, garlic, and shallots. Heat a pan over medium heat and stir-fry these ingredients until fragrant and softened.
  2. Once the aromatics are cooked, set them aside. In the same pan, scramble the egg until fully cooked and set aside.
  3. Combine the pre-cooked vegetables (green beans and carrots), scrambled egg, and the sautéed aromatics in the pan. Mix well.
  4. Add a splash of oyster sauce and a small amount of water to the pan. Cook everything together until well-blended and heated through.
  5. Taste and adjust the seasoning if needed. Once the dish is cooked, remove it from the heat.
  6. Serve hot, as the egg may have a slight odor if left to cool. Enjoy your stir-fried green beans with carrots and egg!
