Ingredients

  • 3 pieces of yellow tofu, cut into your preferred size
  • 1 egg
  • 2 handfuls of bean sprouts
  • 2 shallots
  • 1 garlic clove
  • 5 cm green onion (about 2 inches)
  • 1 tablespoon vegetable oil
  • Sugar, to taste
  • Salt, to taste
  • Ground black pepper, to taste
  • Optional: seasoning or flavor enhancer
  • 1 teaspoon sweet soy sauce
  • 2 red chilies

Instructions

  1. Prepare the Aromatics:
    Heat the vegetable oil in a pan over medium heat. Add the finely chopped shallots, garlic, and red chilies. Sauté until the mixture becomes aromatic and the shallots are translucent.

  2. Cook the Egg:
    Crack the egg into the pan and scramble it lightly with the aromatics. Allow the egg to cook and set slightly, but keep it soft and slightly runny.

  3. Add Tofu:
    Gently add the tofu pieces to the pan. Stir-fry with the egg and aromatics until the tofu begins to brown slightly and is heated through.

  4. Add Water:
    Pour in about a quarter cup of water (a small measuring cup) to help create a bit of sauce. Stir well to combine.

  5. Incorporate Bean Sprouts:
    Add the bean sprouts to the pan. Continue to cook, stirring frequently, until the bean sprouts are just tender but still crisp and the water has mostly evaporated.

  6. Season the Dish:
    Season with salt, sugar, ground black pepper, and optional flavor enhancer to taste. Stir in the sweet soy sauce, ensuring all ingredients are well combined.

  7. Adjust and Serve:
    Taste and adjust seasoning as needed. Once everything is cooked through and well-seasoned, remove from heat.

  8. Garnish and Serve:
    Garnish with sliced green onions if desired, and serve immediately while hot.
