Tahu Gejrot: A Flavorful Indonesian Delight

Ingredients

Ingredient Quantity
Tahu (tofu) 300 gr
Gula merah (brown sugar) 100 gr
Bawang merah (shallots) 10 cloves
Bawang putih (garlic) 2 cloves
Cabe rawit (bird’s eye chili) to taste
Air asam jawa (tamarind water) 3 tbsp
Air (water) 300 ml
Garam (salt) to taste
Minyak goreng (cooking oil) for frying

Instructions

  1. Prepare the Tofu: Heat oil in a frying pan and fry the tofu until golden brown and fully cooked. Once cooked, remove from the oil and cut into bite-sized pieces. Set aside.

  2. Make the Sweet Tamarind Sauce: In a saucepan, bring the water to a boil. Add the brown sugar and stir until completely dissolved. Strain the mixture to remove any impurities and then mix in the tamarind water according to your taste preference.

  3. Create the Spicy Condiment: In a mortar and pestle, coarsely grind the shallots, garlic, bird’s eye chili, and a pinch of salt until a fragrant paste forms.

  4. Assemble the Dish: Arrange the fried tofu on a serving plate. Generously drizzle the spicy condiment over the tofu and top with the sweet tamarind sauce.

  5. Serve: Enjoy this Tahu Gejrot while it’s fresh for the ultimate flavor experience!

This traditional dish beautifully balances the savory, sweet, and spicy elements, making it a delightful addition to any meal.
