Lemongrass 2 stalks
Bay leaves 3 leaves
Granulated sugar 1 tablespoon
Salt 1 teaspoon

Instructions

  1. Prepare the Tempe: Slice the tempe into bite-sized pieces as per your preference. Set aside.

  2. Fry the Anchovies: Clean the dried anchovies and fry them until crispy. Remove from heat and set aside.

  3. Fry the Tempe: Heat cooking oil in a pan and fry the sliced tempe until golden and slightly dry. Remove and set aside.

  4. Prepare the Spices: Thinly slice all the spices, including the bird’s eye chili, red chili, onion, shallots, garlic, galangal, ginger, and lemongrass.

  5. Sauté the Aromatics: In the same pan, add more cooking oil if needed and sauté the onion until softened. Add the shallots and garlic, and continue sautéing until fragrant.

  6. Add the Remaining Spices: Stir in the sliced chilies, galangal, ginger, lemongrass, tomato, and bay leaves. Sauté until the mixture is aromatic.

  7. Combine Tempe and Anchovies: Add the fried tempe and crispy anchovies to the pan. Gently stir to combine.

  8. Add Water: Pour in enough mineral water to slightly cover the tempe.

  9. Season the Dish: Sprinkle in the sugar, salt, optional seasoning, and sweet soy sauce. Stir well to mix all the ingredients.

  10. Simmer: Allow the mixture to come to a boil, then let it simmer until the water reduces and thickens.

  11. Adjust Seasoning: Once thickened, taste and adjust the seasoning if necessary.

  12. Serve: Once fully cooked and the flavors melded together, give it a final stir and serve warm. Enjoy this delightful dish with steamed rice or as part of a larger meal.
