Instructions

  1. Prepare the Beef:
Begin by bringing a pot of water to a boil. Once the water is boiling, add the beef and let it simmer for about 5 minutes. This step helps to remove any impurities and ensures a cleaner broth. After boiling, remove the beef from the pot and discard the water.

  2. Slice the Beef:
Allow the beef to cool slightly before slicing it according to your preference. Thin slices are recommended for a more tender bite.

  3. Sauté the Spices:
In a skillet, heat the cooking oil over medium heat. Add the ground spice mixture (bawang putih, bawang merah, cabai merah, cabai rawit, kunyit, jahe, kemiri, and kapulaga) and sauté until fragrant, approximately 3-5 minutes. Be sure to stir occasionally to prevent sticking.

  4. Combine with Additional Spices:
Add the daun salam, daun jeruk, geprek serasi, and geprek lengkuas to the pan. Continue to sauté until the leaves wilt and the aroma fills the kitchen.

  5. Add the Beef:
Incorporate the sliced beef into the pan, tossing it briefly with the sautéed spices. Pour in approximately 750 ml of water and cover the pot. Let the mixture simmer gently until the beef is tender, checking occasionally and adjusting the seasoning with salt and brown sugar as necessary.

  6. Assemble the Dish:
While the beef is simmering, prepare a serving platter. Arrange the fried tofu, lettuce, boiled bean sprouts, and yellow noodles attractively on the plate.

  7. Serve:
Once the beef is cooked to perfection, ladle the hot broth and beef over the arranged vegetables and tofu. Garnish with crispy onion crackers for added texture and serve immediately while warm.
