Tempe and Egg Stir-Fry (Orek Tempe Telor)

Ingredients:

  • Tempeh: 1/2 block, cut into small cubes
  • Egg: 1, beaten
  • Shallots: 5 cloves, thinly sliced
  • Garlic: 3 cloves, thinly sliced
  • Bird’s Eye Chilies: 3, sliced
  • Red Chili: 1, sliced
  • Soy Sauce: 2 tablespoons
  • Bay Leaves: 2
  • Galangal: 1-inch piece, smashed
  • Salt: to taste
  • Sugar: to taste
  • Black Pepper: to taste
  • Cooking Oil: for frying

Instructions:

  1. Prepare the Eggs:

    • In a bowl, beat the egg and season with a pinch of salt. Heat a small amount of oil in a skillet over medium heat. Pour in the beaten egg and cook until set, creating a thin omelet. Remove from the skillet and cut into bite-sized pieces. Set aside.
  2. Fry the Tempeh:

    • Cut the tempeh into small cubes. Heat oil in a pan over medium heat and fry the tempeh cubes until they are golden brown and cooked through. Remove from the pan and drain on paper towels. Set aside.
  3. Sauté the Aromatics:

    • In the same pan, add a bit more oil if needed. Sauté the sliced shallots, garlic, bird’s eye chilies, and red chili until fragrant and softened. Add the bay leaves and smashed galangal, and continue to cook until the aromatics are fragrant.
  4. Combine Ingredients:

    • Return the fried tempeh to the pan. Add the soy sauce, salt, sugar, and black pepper to taste. Stir well to combine all the flavors.
  5. Add the Egg:

    • Gently fold the pieces of the omelet into the mixture. Stir to combine and ensure everything is well-coated with the sauce.
  6. Adjust Seasoning:

    • Taste and adjust seasoning if needed, adding more salt, sugar, or pepper according to your preference.
  7. Serve:

    • Transfer the Tempe and Egg Stir-Fry to a serving dish. Enjoy warm with steamed rice or as part of a larger meal.
