Ingredients

Quantity Ingredient
5 Eggs (large)
1 pack Kara coconut milk
1 handful Dried shrimp (ebi kering)
5 Fried Tahu Sumedang, cut into quarters
10 Green beans (buncis), sliced diagonally
1 Carrot, julienned
5 leaves Cabbage (kol)
1 stalk Lemongrass (serai), bruised
2 leaves Bay leaves (daun salam)
1/2 tsp Ground galangal (lengkuas bubuk)
To taste Salt and seasoning
Spice Paste:
10 Red chilies
5 Bird’s eye chilies (cabe rawit)
5 Shallots (bawang merah)
3 Garlic cloves (bawang putih)
2 Candlenuts (kemiri)
1 piece Turmeric (kunyit)
1 piece Ginger (jahe)

Instructions

  1. Prepare the Spice Paste: Blend together the red chilies, bird’s eye chilies, shallots, garlic, candlenuts, turmeric, and ginger until smooth.

  2. Cook the Base: In a large pot, combine the spice paste, bruised lemongrass, bay leaves, ground galangal, and one pack of Kara coconut milk. Add water and stir gently to prevent the coconut milk from curdling. Bring to a boil over medium heat.

  3. Add Vegetables: Once boiling, add the green beans and julienned carrots. Cook until slightly tender, then incorporate the cabbage, fried tahu, and dried shrimp.

  4. Add the Eggs: Finally, gently crack the eggs into the pot, being careful not to break the yolks. Cover and simmer until the eggs are cooked to your liking.

  5. Season to Taste: Adjust the flavor with salt and seasoning as needed. Stir gently to combine all ingredients.

  6. Serve: Ladle the Gulai Telur and vegetables into bowls, enjoying the delightful combination of flavors and textures.

This dish is best served with steamed rice, making for a hearty meal that embodies the love and warmth of home cooking. Enjoy the delightful fusion of flavors and the comforting aroma that fills your kitchen!
