Description

🍽️ If you can boil water, then you can make this! A delightful way to jazz up plain couscous, especially if you’re a fan of roasted red peppers 🌶️ as much as I am. You might need to visit a specialty grocery store for the nicoise olives 🫒 (I haven’t checked the regular grocery stores, they might have them, I’m not entirely sure). 2 Olive oil
1 Onion
1 Zucchini
1 Can of chickpeas, drained
1 Lemon, juiced
1 Handful of basil leaves
1/4 Cup of nicoise olives

Directions

  1. Prepare Couscous
