Ingredients

Salt A pinch
Tahu Pong (fried tofu) 4 pieces (halved and briefly boiled)
Bean Sprouts 1 bowl
Green Onion 1 stalk, finely sliced
Red Chilies 2 (curly variety)
Bird’s Eye Chilies 5
Shallots 5 cloves
Garlic 4 cloves
Oyster Sauce 2 tablespoons
Sweet Soy Sauce 3 tablespoons
Ground Pepper To taste
Water 2 tablespoons

Instructions

  1. Prepare the Egg Mixture: In a bowl, beat the eggs with a pinch of salt until well combined. Cook thin omelets in a non-stick pan and set aside. Once cooled, slice into strips.

  2. Fry the Tofu: In the same pan, lightly fry the halved tofu until it develops a golden crust. Remove and set aside.

  3. Sauté the Aromatics: In a little oil, sauté the finely chopped shallots, garlic, and both types of chilies until fragrant and softened.

  4. Combine Ingredients: Add the omelet strips, tofu, bean sprouts, and green onions to the pan. Stir gently over low heat to mix the ingredients.

  5. Season the Dish: Pour in the sweet soy sauce, oyster sauce, and ground pepper. Stir well, tasting for seasoning. If necessary, add a small amount of water to help the flavors meld together.
