Scrambled Eggs with Crumbled Tofu (Orak Arik Telur Tahu Hancur)

This delightful dish combines scrambled eggs and crumbled tofu with a medley of aromatic ingredients, perfect for a satisfying meal.

Ingredients

Quantity Ingredient
10 small white tofu
4 chicken eggs
4 shallots
4 garlic cloves
8 green bird’s eye chilies left whole
1 red chili sliced
1 sachet of sweet soy sauce Bango brand
1 tomato diced
Salt to taste
½ pack beef-flavored Royco
Oil for frying
Water as needed

Instructions

  1. Prepare the Eggs: Whisk the eggs in a bowl until frothy. Heat oil in a pan and scramble the eggs until just set. Remove and set aside.

  2. Fry the Tofu: In the same pan, fry the tofu until golden brown. Once cooked, drain and crumble the tofu using a mortar and pestle or fork.

  3. Sauté Aromatics: Thinly slice the shallots, garlic, red chili, and tomato. In the pan, sauté the shallots and garlic until fragrant, followed by the sliced red chili.

  4. Combine Ingredients: Add the scrambled eggs and crumbled tofu to the pan. Season with salt, Royco seasoning, and sweet soy sauce. Pour in a little water to help the flavors meld together, stirring well.

  5. Finish the Dish: Just before serving, mix in the diced tomato and whole green bird’s eye chilies, cooking until the tomatoes are slightly softened.
