Ingredients:

  • 1 tbsp butter
  • 1 onion
  • 1 clove garlic
  • 1 tbsp flour
  • 1 can tomatoes
  • 1/4 cup white wine
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tbsp tomato paste
  • 1 can tuna
  • 1/4 cup chopped parsley
  • Lemon, juice and rind of
  • 1 can kidney beans
  • 1 can sweetcorn

Instructions:

  1. Melt butter in a large skillet over medium heat. Add onion and garlic and cook until soft, about 3-4 minutes.

  2. Stir in flour and cook for another minute until the flour is well incorporated.

  3. Add the canned tomatoes, along with the lemon rind and juice, dried basil, dried oregano, salt, and pepper to taste. Pour in the white wine and add the tomato paste. Stir well to combine all the flavors, and let it simmer gently for 2-3 minutes.

  4. Once the sauce has thickened slightly, add the drained kidney beans, sweetcorn, tuna, and chopped parsley. Stir to combine all the ingredients.

  5. Allow the mixture to heat through, ensuring the tuna is warmed. This should take around 5 minutes.

  6. If desired, garnish with Parmesan cheese before serving.

  7. Serve hot, either on its own or with pasta or rice for a more substantial meal.
