Instructions

  1. Begin by heating 2 tablespoons of olive oil in a 10-inch cast iron skillet over medium-high heat. Once the oil is hot, add 1 sliced onion and sauté for about 5 minutes until it becomes tender and fragrant.

  2. After the initial sautéing, cover the skillet with a lid, reduce the heat to medium-low, and allow the onion to cook for an additional 15 minutes. During this time, stir often to ensure even cooking and prevent burning. You want the onion to become soft and translucent.

  3. Once the onion is tender, remove the lid and continue cooking for another 5 to 10 minutes until the onions are beautifully browned, stirring frequently to achieve an even caramelization. Remove the sautéed onion from the skillet and set it aside.

  4. In the same skillet, add 1 ½ tablespoons of butter, allowing it to melt and coat the bottom of the pan.

  5. Next, layer half of the sliced turnip, baking potato, and Granny Smith apple in the skillet, slightly overlapping each slice. Sprinkle half of the sautéed onion on top, followed by 1 tablespoon of fresh rosemary, 1 tablespoon of fresh thyme, ¾ teaspoon of fine sea salt, ¾ teaspoon of fresh ground black pepper, and ½ cup of shredded extra-sharp cheddar cheese.

  6. Repeat the layering process with the remaining ingredients: add the rest of the turnip, potato, and apple slices, followed by the remaining onion, rosemary, thyme, salt, pepper, and finish with another ¾ cup of cheddar cheese on top.

  7. Preheat your oven to 400°F (200°C). Once the oven is ready, place the skillet, uncovered, in the oven and bake for 40 to 45 minutes, or until the gratin is tender and the top is golden brown and bubbly. The aromas will fill your kitchen, making it hard to wait.
