  • 1 tablespoon cornstarch
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup firm tofu, cubed
  • 2 teaspoons sesame oil
  • 1/4 cup cashews, chopped

Instructions:

  1. Cook the Spelt: In a medium saucepan, heat one tablespoon of canola or corn oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, or until the onion becomes soft and translucent. Stir in the 3 cups of water along with a pinch of salt, and bring the mixture to a boil. Add the spelt, reduce the heat to low, and cover the pan. Let it simmer for about 45 minutes, or until the spelt is tender and the water is absorbed.

  2. Prepare the Sauce: While the spelt is cooking, in a small bowl, combine the sugar, soy sauce, apple cider vinegar, rice wine, and dry sherry. Mix well. In a separate bowl, dissolve the cornstarch in 3 tablespoons of water, then add this mixture to the sauce and stir to combine. Set aside.

  3. Cook the Vegetables: About 10 minutes before the spelt is done, heat the remaining tablespoon of canola or corn oil in a wok or large skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Add the chopped bok choy and turn the heat to high. Stir-fry for 2-3 minutes until the bok choy starts to wilt. Add the diced red bell pepper and the prepared soy-cornstarch sauce to the pan.

  4. Simmer the Vegetables: Cover the pan, reduce the heat to medium, and let the vegetables simmer for about 8 minutes, stirring occasionally, until they are cooked through and tender.

  5. Add Tofu and Finish: Stir the vegetables, then gently fold in the cubed tofu and sesame oil. Continue to cook for another 2 minutes, allowing the flavors to meld together.

  6. Serve: Spoon the cooked spelt onto individual plates. Top each serving with the bok choy-tofu mixture. Sprinkle with chopped cashews for a delightful crunch. Serve immediately and enjoy this flavorful and satisfying meal!
