Ingredients:

  • 1/2 cup Sesame seeds (Til seeds), roasted
  • 1/2 cup Fresh coconut, grated
  • 4 Pearl onions (Sambar Onions)
  • 3 Dry Red Chillies
  • 10 grams Tamarind
  • 1 tablespoon Jaggery
  • Salt, to taste
  • 1 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1 sprig Curry leaves
  • 2 Dry Red Chillies
  • 1 tablespoon Coconut Oil

Instructions:

  1. Roast Sesame Seeds: Begin by dry roasting the sesame seeds on a pan over medium heat. Stir occasionally and roast for about 10 minutes, or until they turn light brown.

  2. Grind the Ingredients: Add the roasted sesame seeds to a grinder. Add freshly grated coconut, pearl onions (shallots), dry red chillies, tamarind, jaggery, and salt to taste. Add a little water and grind everything into a smooth or coarse paste, depending on your texture preference. Taste and adjust the salt if needed.

  3. Prepare the Tadka (Tempering): Heat a kadai (pan) over medium heat and drizzle in coconut oil. Once the oil is hot, add mustard seeds and let them splutter for a few seconds. Add the curry leaves and let them crackle. Next, add the dry red chillies and sauté until they crisp up.

  4. Combine and Serve: Pour the tempering over the chutney and mix gently. Transfer the chutney to a serving bowl.

  5. Serving Suggestions: Serve the Kodava Ellu Pajji – Sesame & Tamarind Chutney with Akki Roti and Masala Chai for a delightful South Indian breakfast.
