Stir-Fried Water Spinach with Tofu and Sesame Seeds
Ingredients:
- 1 block Chinese tofu, cut into 1.5×1.5 cm cubes and fried
- 200 grams (1 bunch) water spinach, chopped
- For the Seasoning:
- 3 cloves garlic, finely chopped
- 3 shallots, thinly sliced
- 1 small onion, thinly sliced
- 1 red chili, sliced diagonally
- 5 small red bird’s eye chilies, finely sliced
- 1 large tomato, diced
- 1 tablespoon oyster sauce
- 1 tablespoon tomato ketchup
- ½ teaspoon table salt
- ½ teaspoon granulated sugar
- ½ teaspoon sesame oil
- ½ teaspoon toasted sesame seeds
- 2 tablespoons vegetable oil for stir-frying

Prepare Ingredients:
- Ensure all ingredients are prepped according to the list. Cut the tofu into cubes and fry until golden brown. Chop the water spinach and set aside.

Stir-Fry Aromatics:
- Heat vegetable oil in a pan over medium heat. Add the garlic, shallots, and onion, stirring frequently until fragrant and golden brown.

Add Chilies and Tomato:
- Add the red chili, bird’s eye chilies, and diced tomato to the pan. Stir well to combine with the aromatic mixture.

Cook Water Spinach:
- Add the water spinach to the pan, stirring to mix with the aromatics and chilies. Pour in a small amount of water to help the spinach cook down. Continue to stir until the spinach is wilted.

- Gently fold in the fried tofu cubes and season with oyster sauce, tomato ketchup, salt, and sugar. Stir to ensure the tofu and spinach are well-coated with the seasonings.

- Drizzle the sesame oil over the mixture and sprinkle with toasted sesame seeds. Stir gently to combine.
