Stir-Fried Water Spinach with Tofu and Sesame Seeds

Ingredients:

  • 1 block Chinese tofu, cut into 1.5×1.5 cm cubes and fried
  • 200 grams (1 bunch) water spinach, chopped
  • For the Seasoning:
    • 3 cloves garlic, finely chopped
    • 3 shallots, thinly sliced
    • 1 small onion, thinly sliced
    • 1 red chili, sliced diagonally
    • 5 small red bird’s eye chilies, finely sliced
    • 1 large tomato, diced
    • 1 tablespoon oyster sauce
    • 1 tablespoon tomato ketchup
    • ½ teaspoon table salt
    • ½ teaspoon granulated sugar
    • ½ teaspoon sesame oil
    • ½ teaspoon toasted sesame seeds
    • 2 tablespoons vegetable oil for stir-frying

Instructions:

  1. Prepare Ingredients:

    • Ensure all ingredients are prepped according to the list. Cut the tofu into cubes and fry until golden brown. Chop the water spinach and set aside.
  2. Stir-Fry Aromatics:

    • Heat vegetable oil in a pan over medium heat. Add the garlic, shallots, and onion, stirring frequently until fragrant and golden brown.
  3. Add Chilies and Tomato:

    • Add the red chili, bird’s eye chilies, and diced tomato to the pan. Stir well to combine with the aromatic mixture.
  4. Cook Water Spinach:

    • Add the water spinach to the pan, stirring to mix with the aromatics and chilies. Pour in a small amount of water to help the spinach cook down. Continue to stir until the spinach is wilted.
  5. Add Tofu and Seasonings:

    • Gently fold in the fried tofu cubes and season with oyster sauce, tomato ketchup, salt, and sugar. Stir to ensure the tofu and spinach are well-coated with the seasonings.
  6. Finish with Sesame:

    • Drizzle the sesame oil over the mixture and sprinkle with toasted sesame seeds. Stir gently to combine.
  7. Serve:

    • Taste and adjust seasoning if necessary. Once the flavors are well-balanced and the spinach is tender, remove from heat.
  8. Enjoy:
