Ingredients:

  • 1 onion
  • 4 cloves garlic
  • 3 tablespoons olive oil
  • 2 cups pinto beans
  • 1 cup pink beans
  • 2 cups tomato sauce
  • 4 teaspoons ground cumin
  • 1-2 jalapeno chiles (to taste)
  • 1/4 cup fresh coriander
  • 12 flour tortillas
  • 1 1/2 cups shredded Monterey Jack cheese
  • Salsa (to serve)

Recipe Instructions:

  1. Make the Filling: In a large heavy skillet, cook the onion and garlic in the olive oil over moderate heat until the onion is softened. Add the beans to the skillet and mash about half of them coarsely with the back of a wooden spoon.

  2. Add the tomato sauce, ground cumin, jalapeno chiles (to taste), and salt and black pepper to the skillet. Simmer the mixture, stirring, for 3 to 5 minutes, or until it is slightly thickened. Stir in the fresh coriander.

  3. Working with one warmed tortilla at a time and keeping the others covered, spread about 3 tablespoons of the filling down the center of each tortilla. Roll the tortillas, enclosing the filling but keeping the ends open.

  4. Assemble the Casserole: Arrange the burritos, seam sides down, in one layer in a baking dish. Sprinkle them with the shredded Monterey Jack cheese.

  5. Bake: Cover the baking dish with foil and bake in the middle of a preheated 350°F oven for 10 minutes, or until the cheese is melted and bubbly.

  6. Serve: Serve the bean burrito casserole with your favorite guacamole and salsa on the side.

This recipe yields approximately 12 burritos, serving 6.

Whether you’re cooking for a crowd or just craving a quick and satisfying meal, this Bean Burrito Casserole is a surefire winner. With its simple preparation and bold flavors, it’s bound to become a staple in your culinary repertoire. Enjoy the warm, cheesy goodness of this Mexican-inspired dish, perfect for any occasion!
