Ingredients:

  • 150g basmati rice
  • 1 garlic clove
  • 1 spring onion
  • 3 eggs
  • 1 dash of Tabasco sauce
  • 9 tiger shrimp
  • 200ml soy sauce
  • 1 tablespoon dry sherry
  • 1 tablespoon cornstarch
  • Coriander leaves
  • Vegetable oil
  • Breadcrumbs

Instructions:

  1. Prepare the Rice:

    • Wash the basmati rice until the water runs clear.
    • Bring the rice to a boil with 300ml of water.
    • Simmer gently, covered, for 10 minutes until the water is absorbed and the grains are separate.
  2. Prep the Ingredients:

    • Trim and chop the spring onion, separating the white and green parts.
    • Beat two eggs with 1/2 tablespoon of vegetable oil, a few drops of Tabasco, and half the coriander leaves.
    • Shell and devein the tiger shrimp, then butterfly them.
  3. Marinate the Prawns:

    • Mix soy sauce, sherry, and cornstarch, then marinate the prawns for five minutes.
  4. Coat the Prawns:

    • Beat the remaining egg and place breadcrumbs in separate bowls.
    • Dip each prawn in egg, then coat with breadcrumbs. Chill until ready to cook.
  5. Cook the Rice:

    • Heat a wok and add vegetable oil.
    • Stir-fry garlic and white onion, then add rice and peas.
    • Pour in the egg mixture and remaining green onion and coriander. Season with soy sauce.
  6. Cook the Prawns:

    • Heat more oil in the wok and cook the prawns in batches until golden and cooked through.
  7. Serve:

    • Drain the prawns on kitchen paper and serve on top of the egg-fried rice.
