Sizzling Shrimp and Crispy Tofu Stir-Fry

Stir-Fried Shrimp and Tofu (Tumis Udang dan Tahu)

Ingredients:

  • 250 grams medium-sized shrimp, heads removed
  • 4 pieces Chinese tofu, cut into cubes and fried until crispy
  • 1/4 carrot, cut into matchsticks
  • 1/2 onion, sliced lengthwise
  • 3 cloves garlic, minced
  • 4 shallots, minced
  • 1 thumb-sized piece ginger, smashed
  • 7 bird’s eye chilies, sliced diagonally (adjust to taste)
  • 1 stalk green onion, chopped into thick pieces
  • 2 teaspoons kecap bango (sweet soy sauce)
  • 1 teaspoon tomato sauce
  • 3 teaspoons oyster sauce
  • Salt, to taste
  • Water, as needed
  • 2 tablespoons cooking oil

Instructions:

  1. Heat the Oil: In a large skillet or wok, heat 2 tablespoons of cooking oil over medium heat. Add the sliced onion and sauté until fragrant and translucent.

  2. Add Aromatics: Incorporate the minced garlic, shallots, bird’s eye chilies, carrot, and smashed ginger into the skillet. Stir-fry until the vegetables are tender and the mixture is aromatic.

  3. Cook the Tofu and Shrimp: Add the fried tofu cubes and shrimp to the skillet. Stir-fry until the shrimp turn pink and the tofu begins to absorb the flavors.

  4. Add Liquid: Pour in enough water to slightly cover the tofu and shrimp. Allow the mixture to come to a simmer.

  5. Season: Season with oyster sauce, tomato sauce, kecap bango, and salt. Stir well to combine all the flavors. Let the liquid reduce and thicken until it coats the tofu and shrimp.

  6. Final Touch: Taste and adjust seasoning if necessary. Add the chopped green onion, stirring briefly to combine.

  7. Serve: Remove from heat and serve hot. Enjoy your delicious stir-fried shrimp and tofu!
