Karen’s Philly Chili ๐ŸŒถ๏ธ๐Ÿฒ

Description: This hearty chili, born from a friend’s recipe and lovingly tweaked over time, has become a staple in Karen’s household. Whether it’s a chilly winter day or a surprisingly cool summer evening, this dish hits the spot. It’s customizable tooโ€”spice it up for the brave or keep it mild for the little ones. Served alongside a warm loaf of freshly baked bread, it’s a comforting meal that brings the whole family together.

  • Prep Time: 10 minutes
  • Cook Time: 2 hours
  • Total Time: 2 hours and 10 minutes
  • Servings: 8

Ingredients:

  • 2 lbs ground beef
  • 1 lb ground turkey
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp garlic powder
  • 1/4 cup chili powder (adjust to taste)
  • 1 can (28 oz) crushed tomatoes
  • 1 cup fresh tomatoes, diced
  • 1 cup beef broth
  • 1 can cannellini beans, drained and rinsed
  • 1 can great northern beans, drained and rinsed
  • 1 can red kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • Salt, to taste
  • Cayenne pepper, to taste
  • Crushed red pepper flakes, to taste
  • Shredded Monterey Jack cheese, for topping
  • Additional chopped onion, for topping
  • Sour cream, for topping

Instructions:

  1. Brown the Meat: In a large pot or Dutch oven over medium heat, brown the ground beef and turkey until fully cooked. Drain excess grease if needed.

  2. Add Aromatics: Stir in the chopped onion and minced garlic. Cook until the onion becomes translucent, about 5 minutes.

  3. Seasoning: Sprinkle in the garlic powder and chili powder, adjusting the amount of chili powder to suit your desired level of spiciness. Stir well to coat the meat and onions with the spices.

  4. Incorporate Remaining Ingredients: Pour in the crushed tomatoes, fresh tomatoes, beef broth, drained and rinsed beans (cannellini, great northern, red kidney, and black beans). Stir everything together until well combined.

  5. Simmer: Allow the chili to simmer, uncovered, over low heat for about 2 hours, stirring occasionally. This allows the flavors to meld together and the chili to reach the desired consistency. If it thickens too much, you can add more broth or water.

  6. Serve: Ladle the hot chili into bowls and top with shredded Monterey Jack cheese, chopped onion, and a dollop of sour cream, if desired. Serve alongside warm, crusty bread for a satisfying meal.
