Ingredients:

  • 2 tsp black mustard seeds
  • 1/4 cup new potato, diced
  • 1/2 shallot, finely chopped
  • 1/4 baby eggplant, diced
  • 1/2 cup green beans, chopped
  • 1/4 cup fresh peas
  • 1/4 cup chopped tomato
  • 3-4 tbsp curry paste (adjust to taste)
  • 1/4 cup fresh cilantro leaves, chopped
  • 1 tbsp oil

Instructions:

Step Description
1. Heat the oil in a large frying pan over medium heat.
2. Saute the black mustard seeds until they start to pop, releasing their aromatic flavor. Remove them from the pan and set them aside for later.
3. In the same pan, add diced potatoes and finely chopped shallots. Reduce the heat, cover the pan, and let them simmer for about 5 minutes, allowing the flavors to meld together.
4. Stir in the diced eggplant, chopped green beans, fresh peas, and chopped tomatoes. These colorful veggies will add both texture and taste to your dish.
5. Mix in the desired amount of curry paste, ensuring it coats the vegetables evenly. Adjust the quantity based on your spice preference. Add half of the chopped cilantro leaves to infuse the dish with freshness.
6. Cover the pan and let the vegetables simmer for approximately 20 minutes, stirring occasionally to prevent sticking and ensure even cooking.
7. Finally, add the reserved black mustard seeds and sprinkle the remaining chopped cilantro leaves on top before serving. This will add a burst of flavor and visual appeal to your dish.

Enjoy the spicy goodness of these flavorful veggies as a standalone meal or as a delightful accompaniment to your favorite protein or rice dish!
