Smashed Spicy Chicken with Indonesian Sambal

Spicy Indonesian-Style Smash Chicken (Ayam Penyet Sangar)

Ingredients:

  • 1/4 chicken breast
  • 1 packet beef bouillon cube (Masako sapi)
  • For the Sambal:
    • 3 shallots
    • 2 garlic cloves
    • 1 tomato
    • 100 grams red chilies
    • 50 grams bird’s eye chilies (cabe rawit)
    • 2 packets shrimp paste (terasi)

Instructions:

  1. Prepare the Chicken:
    In a pot, add the chicken breast and a packet of beef bouillon cube. Add enough water to cover the chicken. Simmer gently until the water is reduced by half and the flavors are absorbed into the chicken, ensuring that it remains tender and flavorful throughout.

  2. Cook the Sambal:
    While the chicken is cooking, prepare the sambal. Place shallots, garlic, tomato, red chilies, and bird’s eye chilies into a pot. Add just enough water to cover the ingredients. Boil until all components are softened.

  3. Blend the Sambal:
    Transfer the boiled ingredients to a blender. Add the shrimp paste and a pinch of salt. Blend until you achieve a smooth and well-combined texture. Taste and adjust seasoning as needed.

  4. Fry the Chicken:
    Once the chicken is fully cooked, remove it from the pot and let it drain. Heat oil in a frying pan over medium heat. Fry the chicken until it turns a golden brown and crispy.

  5. Serve:
    Arrange the fried chicken on a mortar and pestle (cobek) or a serving plate. Gently press down on the chicken to “smash” it, allowing the flavors to infuse. Top with the prepared sambal. Serve hot with steamed rice for a truly delightful meal.
