Ingredients:

  • 1 1/2 cups plain flour
  • 1 tsp salt
  • 90g butter (plus extra for frying)
  • 1/4 cup water
  • 1 tbsp butter
  • 2 leeks, thinly sliced
  • 1 pack smoked salmon, bones removed
  • 2 eggs
  • 1 cup cream
  • 3 tomatoes, sliced
  • Salt and pepper, to taste
  • Grated cheese (optional)

Instructions:

Step Description
1 Sift the flour and salt into a bowl.
2 Rub in 90g of butter until the mixture resembles fine breadcrumbs.
3 Add the egg yolk and water, kneading until the dough forms a ball.
4 Chill the dough in the fridge for 10-15 minutes.
5 Roll out the pastry and use it to line a 20-25cm quiche dish.
6 Cover with baking paper and fill with rice, beans, or pie weights.
7 Bake blind for 7-10 minutes at 190°C.
8 Meanwhile, melt 1 tbsp of butter in a frying pan and fry the leeks until softened (about 3 minutes).
9 Drain the smoked salmon and remove any bones. You can also remove the skin if desired.
10 In a separate bowl, beat the eggs with cream, and season with salt and pepper.
11 Remove the rice or weights from the quiche crust and scatter the cooked leeks over the bottom.
12 Top with the smoked salmon.
13 Evenly pour the egg and cream mixture over the leeks and salmon.
14 Arrange tomato slices on top of the quiche. Optionally, sprinkle with grated cheese.
15 Bake in a preheated oven at 180°C for 35-40 minutes, or until the quiche is golden-brown and set in the center.
16 Allow the quiche to cool slightly before slicing and serving. Enjoy!
