Smoky Bacon Chicken Fajitas

Category: Main Dishes
Serves: 8

Ingredients:

Ingredient Quantity
Chicken breast 700g
Smoked bacon 100g
Red bell pepper 1
Yellow bell pepper 1
Fresh spring onions 4
Extra virgin olive oil As needed
Fine salt A pinch
Ground black pepper As needed
Lime 1
Sweet paprika 1 teaspoon
Ground chili powder ½ teaspoon
Fresh parsley As needed
Tortillas 8
Cheese (e.g., provolone or Swiss) 200g
Sour cream As needed

Instructions:

  1. Marinate the Chicken:
Start by preparing the chicken breast. Cut the chicken into bite-sized cubes. In a mixing bowl, zest the lime and add the juice, then drizzle with a little extra virgin olive oil. Sprinkle in the sweet paprika, ground chili powder, and the fresh parsley (finely chopped). Add a pinch of salt and a few cracks of black pepper. Mix everything thoroughly with a spoon, ensuring the chicken is well-coated in the marinade. Cover with plastic wrap and let the mixture marinate in the fridge for at least 2 hours.

  2. Prepare the Vegetables:
Wash the bell peppers under cold water. Cut them in half, remove the stem, seeds, and any inner membranes, then slice them into strips. Clean the spring onions by cutting off the root ends and discarding the tough green tops. Slice the remaining part into thin rounds.

  3. Cook the Vegetables:
Heat a large frying pan over medium-high heat and add a drizzle of extra virgin olive oil. Once hot, toss in the spring onions and bell peppers. Sauté them for a few minutes, stirring occasionally, until they soften and begin to char lightly. Be careful not to burn them, as you want the vegetables to be tender but still vibrant.

  4. Add the Smoked Bacon:
Dice the smoked bacon into small cubes and add them to the pan with the cooked vegetables. Let the bacon crisp up slightly for about 2-3 minutes. Stir gently to combine the flavors.

  5. Cook the Chicken:
Once the bacon is cooked, add the marinated chicken to the pan. Stir to ensure the chicken is well mixed with the vegetables and bacon. Cook the chicken for about 5-7 minutes, or until it turns white and is fully cooked through. Taste and adjust seasoning with salt and pepper as necessary. Turn off the heat once the chicken is done.

  6. Grate the Cheese:
While the chicken mixture is cooking, grate the cheese using a coarse grater. You can use provolone or Swiss cheese, or any cheese of your preference that melts well.

  7. Assemble the Fajitas:
To assemble, take one tortilla (store-bought or homemade), and fill it generously with the cooked chicken, bacon, and vegetable mixture. If desired, top with a spoonful of sour cream and a sprinkle of grated cheese. Roll the tortilla tightly to enclose the filling. For easier eating, you can cut the rolled tortillas in half.

  8. Serve:
Serve the fajitas with a side of sour cream, additional cheese, and maybe even a squeeze of lime for extra zing. These smoky bacon chicken fajitas are now ready to be enjoyed!

Tips & Variations:

  • For extra flavor, consider adding a few fresh cilantro leaves inside your fajitas before rolling them up.
  • If you like your fajitas with a bit of heat, feel free to add a few more chili flakes or a dash of hot sauce.
  • For a lighter version, you can use whole-wheat tortillas or even lettuce leaves as wraps instead of the regular tortillas.

These smoky bacon chicken fajitas offer a perfect balance of juicy chicken, crispy bacon, and sweet peppers, all wrapped in a warm tortilla and topped with melting cheese and tangy sour cream. Perfect for any casual meal or get-together with friends and family!
