Smoky Beef Udon Stir-Fry Recipe

Ingredients:

  • Frozen Udon Noodles
  • Shredded Cabbage
  • Carrots, julienned
  • Chinese Mustard Greens (optional)
  • Bell Peppers, sliced
  • Minced Garlic
  • Sliced Green Onions
  • Sliced Yellow Onion
  • Smoked Beef
  • Shrimp and eggs (optional, if available)

Instructions:

  1. Prepare the Udon Noodles:
    Begin by boiling a pot of water. Add the frozen udon noodles and cook briefly until they are just tender, ensuring they do not become too soft. Drain and set aside.

  2. Prepare the Vegetables and Meat:
    While the noodles are cooking, slice the smoked beef into thin strips. Chop the cabbage, bell peppers, and carrots. If using, peel and devein the shrimp, and beat the eggs in a small bowl.

  3. Cook the Aromatics:
    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and cook until fragrant. Add the sliced yellow onion and continue to cook until it softens and becomes translucent.

    If using shrimp and eggs, push the noodle mixture to one side of the skillet. Add a small amount of oil to the empty side and scramble the eggs until cooked through. Add the shrimp to the same side and cook until pink and opaque. Once cooked, mix everything together.

  7. Final Touches and Serving:
    Taste the stir-fry and adjust the seasoning if necessary. Once everything is well combined and heated through, remove from heat. Serve immediately, garnished with additional green onions if desired.
