Ingredients:
- 3 1/2 cups all-purpose flour
- 1 packet fast-rising active dry yeast
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 1/2 cups warm water
- 1 tablespoon olive oil (plus extra for brushing)
- 3 tablespoons olive oil (for filling)
- 1 pound boneless skinless chicken breast, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/8 teaspoon white pepper
- 1/8 teaspoon turmeric
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 clove garlic, minced
- 2 chipotle chiles in adobo, pureed
- 2 cups shredded Monterey Jack cheese
- 1/4 cup fresh coriander, chopped
Instructions:
-
Prepare the Dough:
- In a large bowl, combine flour, yeast, salt, and sugar.
- Gradually stir in warm water and 1 tablespoon of olive oil until a soft dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a lightly buttered bowl, cover with a tea towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
-
Make the Filling:
- Puree the chipotle chiles in adobo until smooth.
- In a small bowl, toss the sliced chicken with salt, chili powder, cumin, garlic powder, dried oregano, white pepper, and turmeric.
- Heat 3 tablespoons of olive oil in a skillet over medium heat.
- Saute the seasoned chicken slices until cooked through, about 5 minutes.
- Remove chicken from the skillet and set aside.
- In the same skillet, saute diced bell peppers and minced garlic until tender, about 5 minutes.
- Add the cooked peppers to the chicken.
- Stir in the chipotle puree, shredded Monterey Jack cheese, and chopped coriander.
-
Assemble the Calzones:
- Punch down the risen dough and divide it into 12 portions.
- Roll each portion into a 6-inch circle on a floured surface.
- Spoon the filling into the center of each dough circle, dividing evenly.
- Wet the edges of the dough with water or beaten egg, then fold the circles in half to form half-moons. Press the edges firmly to seal.
-
Cook the Calzones:
- Preheat the grill to medium heat.
- Brush both sides of the calzones with olive oil.
- Grill the calzones for about 5 minutes on each side, until the dough is cooked and golden brown.
- Alternatively, you can bake the calzones in the oven at 375ยฐF (190ยฐC) for 15-20 minutes, or until golden brown.
-
Serve and Enjoy:
- Serve the seasoned chicken calzones hot, either as a snack or a meal.
- Pair them with Mexican rice and a salad for a complete and satisfying dish.
Tips and Notes:
- Customize the filling to suit your taste preferences. Try adding sauteed onions or swapping out the peppers for other vegetables.
- If you have leftover filling, it’s perfect for snacking or saving for another batch of calzones.
- Experiment with different cheeses for variety. Pepper Jack or cheddar would also work well in this recipe.
