Grilled Ayam Bakar (Indonesian Grilled Chicken)

Ingredients:

  • 1 kg chicken, cut into 10 pieces
  • 1 ounce garlic
  • 1 ounce candlenuts
  • 3 tomatoes
  • 1/4 lombok pepper (or substitute with mild chili peppers)
  • Fried shallots
  • Brown sugar, chicken stock powder, salt to taste

Instructions:

  1. Marinate the Chicken:

    • Blend together garlic, salt, and chicken stock powder. Rub this mixture all over the chicken pieces. Add kaffir lime leaves and lemongrass for extra flavor. Let the chicken marinate for at least 1 hour.
  2. Prepare the Spices:

    • Grind the fried shallots, candlenuts, lombok pepper, and tomatoes until smooth.
  3. Grill the Chicken:

    • Grill the marinated chicken until cooked through and slightly charred, about 10-15 minutes on each side depending on the heat of your grill.
  4. Combine and Simmer:

    • Heat a pan, then add the ground spice mixture along with brown sugar, chicken stock powder, and salt to taste. Stir-fry until fragrant.
  5. Finish Cooking:

    • Add the grilled chicken into the spice mixture. Coat the chicken evenly with the spices and simmer for a few minutes to let the flavors meld together.
  6. Final Grilling:

    • Optionally, grill the chicken briefly again to enhance the smoky flavor and caramelization of the spices.
  7. Serve:
