Grilled Chicken in Sweet Soy Sauce (Ayam Bakar Kecap)

Ingredients:

  • 10 pieces of chicken thighs
  • 5 shallots
  • 4 cloves of garlic
  • Red and green chili peppers, to taste
  • Cumin, to taste
  • Coriander, to taste
  • 1 segment of ginger
  • 1 segment of turmeric
  • 1 segment of galangal
  • 2 stalks of lemongrass
  • Kaffir lime leaves
  • Bay leaves
  • Sweet soy sauce (kecap manis)
  • Salt
  • Royco (seasoning)
  • Brown sugar, to taste

Instructions:

  1. Clean the chicken thoroughly and pat dry.

  2. Prepare the spice paste: Blend or pound shallots, garlic, red and green chilies, cumin, coriander, ginger, turmeric, and galangal into a smooth paste. Exclude the lemongrass, kaffir lime leaves, and bay leaves from blending; these will be added later during cooking.

  3. Sauté the spice paste: Heat some oil in a pan over medium heat. Sauté the spice paste until fragrant. Add the kaffir lime leaves and bay leaves.

  4. Cook the chicken: Add the chicken pieces to the pan. Stir well to coat the chicken with the spice paste. Pour in the sweet soy sauce. Stir again to combine thoroughly. Let the chicken marinate and absorb the flavors.

  5. Grill the chicken: Preheat a grill or barbecue. Grill the marinated chicken until cooked through and slightly charred, basting with the remaining marinade for extra flavor.

  6. Serve: Once grilled to perfection, serve the Ayam Bakar Kecap hot with steamed rice and your favorite side dishes.
