Lodeh Tahu Pe Asap (Smoked Tofu Vegetable Stew)

Ingredients

Ingredient Quantity
Smoked Tofu 4 pieces, cut into halves or thirds
Instant Coconut Milk 1/2 packet (30 ml)
Water 500 ml
Ground Spices:
Coriander Powder 1/2 teaspoon
Garlic 3 cloves
Shallots 4 pieces
Red Chili Peppers 5 pieces (adjust to taste)
Turmeric 2 cm
Kencur (aromatic ginger) 2 cm
Other Spices:
Galangal 2 cm
Kaffir Lime Leaves 2 leaves
Bay Leaves 2 leaves
Salt To taste
Mushroom Powder To taste

Instructions

  1. In a pan, sauté the ground spices along with the galangal, bay leaves, and kaffir lime leaves until fragrant.
  2. Pour in the water and bring to a boil.
  3. Add the smoked tofu and the fried tofu, stirring to combine, then season with salt and mushroom powder. Cook until the flavors meld.
  4. Pour in the instant coconut milk, adjust seasoning as needed, and the dish is ready to serve.
