- Broil the fillets 5 inches from the heat for 10-15 minutes or until the fish is done and flakes easily with a fork.
- Transfer the cooked fillets to a bowl, flake the fish, and set aside.

- In a saucepan, melt 1/3 cup of butter over low heat.
- Add in the all-purpose flour and stir with a whisk until smooth.
- Cook and whisk constantly for 1 minute.
- Gradually add in the milk, cooking and whisking constantly over medium heat for 8 minutes or until the mixture is thickened and bubbly.
- Add in the salt, pepper, and dry mustard, stirring to combine.
- Pour the sauce over the flaked fish.

- To the fish mixture, add 1/2 cup of breadcrumbs, diced red bell peppers, chopped green onions, and hot sauce.
- Stir all the ingredients together until well combined.
- Cover the bowl and chill the mixture for at least 1 hour to allow the flavors to meld.

- Shape 1/4 cup of the fish mixture into a patty and repeat with the remaining mixture.
- Coat each patty evenly with the remaining breadcrumbs.

- Fry the patties in batches, cooking for 3 minutes on each side or until lightly browned, adding more butter and/or oil as needed.
