Ingredients:

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • Zest of one lemon
  • 1 cup butter, softened
  • 1/4 cup margarine
  • 1/2 cup sugar
  • 3/4 cup ripe bananas, mashed (approximately 2 bananas)
  • 2 large eggs
  • 1 1/2 cups sliced almonds

Instructions:

  1. Preheat oven to 350°F.
  2. Grease a 9 x 5 inch loaf pan.
  3. In a bowl, sift together all-purpose flour, baking powder, baking soda, salt, ground ginger, allspice, and nutmeg.
  4. Add lemon zest and sliced almonds to the flour mixture. Stir until well combined. Set aside.
  5. In a large mixing bowl, beat softened butter until soft and creamy.
  6. Add sugar to the butter and beat until the mixture is light and fluffy.
  7. Add eggs to the mixture and beat until thoroughly blended.
