Ingredients

- 1 whole coconut, coarsely grated

- 2 kaffir lime leaves

- 1 tablespoon coriander seeds
- Granulated sugar, to taste
- Salt, to taste

Instructions
Preparing the Beef Lung
- Begin by boiling or pressure-cooking the beef lung with bay leaves and a pinch of salt until tender.
- Once cooked, cut the beef lung into bite-sized squares and set aside.
- In a large pan, heat some cooking oil and fry the beef lung pieces until they are crispy and golden brown. Set aside.
Making the Serundeng (Spiced Coconut Flakes)
- In a blender or mortar and pestle, grind the shallots, garlic, and coriander seeds into a smooth paste.
