Serundeng Paru Sapi (Fried Beef Lung with Spiced Coconut Flakes)

Ingredients

  • 1/2 kg (1.1 lbs) beef lung
  • 1 whole coconut, coarsely grated
  • 2 bay leaves
  • 2 kaffir lime leaves
  • Palm sugar, to taste

  • 8 cloves of shallots
  • 6 cloves of garlic
  • 1 tablespoon coriander seeds
  • Granulated sugar, to taste
  • Salt, to taste
  • Seasoning (optional)
  • Cooking oil, for sautéing

Instructions

Preparing the Beef Lung

  1. Begin by boiling or pressure-cooking the beef lung with bay leaves and a pinch of salt until tender.
  2. Once cooked, cut the beef lung into bite-sized squares and set aside.
  3. In a large pan, heat some cooking oil and fry the beef lung pieces until they are crispy and golden brown. Set aside.

Making the Serundeng (Spiced Coconut Flakes)
