Instructions

  1. Prepare the Ridge Gourd
Begin by thoroughly washing the ridge gourd (turai) and chopping it into small pieces. Set aside.

  2. Heat the Oil
In a medium-sized skillet or kadai, heat 1 tablespoon of oil over medium heat.

  3. Add Spices and Curry Leaves
Add the mustard seeds to the hot oil. Once they start to splutter, add the urad dal and curry leaves. Sauté for about 15 seconds until the urad dal turns golden.

  4. Cook the Onion
Add the chopped onion to the skillet. Sauté until the onions soften and turn translucent.

  5. Add Ridge Gourd
Once the onions are soft, add the chopped ridge gourd. Stir well, cover the skillet, and cook for 6-8 minutes, or until the ridge gourd becomes tender.

  6. Add the Eggs
Crack the eggs into a bowl and beat lightly. Pour the eggs over the cooked ridge gourd, stirring continuously to combine.

  7. Season and Finish
Season the mixture with salt and black pepper powder. Continue stirring until the eggs are fully cooked and slightly fluffy.

  8. Garnish and Serve
Garnish with fresh curry leaves and serve warm. Enjoy this egg and ridge gourd bhurji with mixed vegetable sambar and steamed rice for a hearty, wholesome meal.

Egg and Ridge Gourd Bhurji brings together the gentle flavors of ridge gourd and the protein-rich goodness of eggs, all infused with South Indian spices. Simple to make and loaded with nutrition, it’s a perfect dish to enjoy with family.
