Shallots 3 pieces
Garlic 3 cloves
Ginger 3 cm
Galangal 2 cm
Turmeric 5 cm
Candlenuts (Kemiri) 4 pieces
Black pepper to taste
Sautéing Spices (Bumbu Menumis):
Red chili 2 pieces
Green chili 4 pieces
Shallots 2 pieces
Lemongrass 1 stalk
Other Ingredients:
Sweet soy sauce (Kecap Manis) to taste (brand SH)
Salt to taste
Granulated sugar to taste

Instructions

  1. Prepare the Jamur Merang:
Begin by cleaning the jamur merang thoroughly. In a pot of boiling water, blanch the mushrooms for about 3 minutes, then set them aside to drain and cool.

  2. Fry the Tempe and Tahu:
Cut the tempe and tahu into cubes. In a pan over medium heat, fry the cubes until they turn golden brown and crispy, achieving your desired texture. Once done, remove them from the oil and drain on paper towels.

  3. Make the Sautéing Spices:
In the same pan, add the red and green chili along with the shallots and sauté them until they become fragrant and slightly wilted. Next, introduce the ground spice paste (bumbu halus) along with the lemongrass. Continue to sauté until the mixture becomes aromatic and thickens slightly.

  4. Combine the Ingredients:
Reduce the heat and pour in the sweet soy sauce, adjusting to your taste preference. Season with salt and sugar, and make sure to taste for balance. Gradually add in the previously blanched jamur merang, along with the fried tempe and tahu, ensuring that everything is well-coated in the sauce. Stir gently until all ingredients are combined and the flavors meld together beautifully.

  5. Serve:
Once everything is heated through and well-mixed, your Jamur Merang Tempe Tahu Kecap Rempah is ready to be served. Transfer it to a serving dish and enjoy this delightful dish with steamed rice or as a part of your meal spread.

This vibrant and hearty recipe is not only a treat for the taste buds but also a beautiful representation of traditional Indonesian cuisine. Perfect for family gatherings or a delightful weeknight dinner, enjoy the unique combination of ingredients and flavors that come together in this aromatic dish!
