Pav bhaji masala (for sprinkling) as needed
Coriander (Dhania) leaves (finely chopped) for garnish

Instructions

  1. Prepare the Base: In a preheated pan, melt 2 tablespoons of butter. Add the cumin seeds; when they begin to sizzle, incorporate the finely chopped garlic and sauté for a few seconds until fragrant.

  2. Cook the Onions: Add the chopped onions and green chilli to the pan. Cook until the onions turn a golden color, approximately 4-6 minutes, stirring occasionally.

  3. Spice It Up: Once golden, stir in salt, turmeric powder, red chilli powder, coriander powder, and cumin powder. Add the chopped tomatoes, sprinkle a little water, cover, and cook for about 3-4 minutes until the tomatoes soften.

  4. Mash the Mixture: Uncover and use a potato masher to mash the onion-tomato mixture well. Stir in the pav bhaji masala and mix thoroughly.

  5. Scramble the Eggs: In a separate bowl, beat three whole eggs. Gradually add the eggs to the onion-tomato base on medium-high heat, mixing vigorously to scramble them into the masala.

  6. Incorporate Boiled Eggs: Once scrambled, add the chopped boiled eggs and mix until well combined. Adjust salt to taste and set aside.

  7. Fry the Eggs: In a small omelette pan, heat 1 teaspoon of butter, greasing the entire surface. Break one egg into a bowl and gently pour it into the hot pan. Sprinkle with salt, pav bhaji masala, and coriander leaves. Cook for 2-3 minutes until the egg white sets but the yolk remains soft.

  8. Serve: Carefully slide the fried egg onto the serving platter with the Anda Ghotala. Repeat for the remaining eggs. Serve the Anda Ghotala hot, accompanied by buttered pav and a refreshing Masala Soda Shikanji for a complete breakfast experience.
