Ayam Geprek Sambal Ijo Recipe
Ingredients:
- 1/2 kg chicken (preferably chicken breast)
- 3/4 packet of ayam seasoning mix (or make your own seasoning mix)
- Juice of 1 lime
- 1/4 kg oil for frying
For the Sambal Ijo (Green Chili Sauce):
- 20 green bird’s eye chilies
- 3 large green chilies
- 3 cloves garlic
- 1 cm piece of ginger
- Salt and flavor enhancer to taste
For Serving:
- Cucumber slices
- Cooked pakcoy (Chinese cabbage)
Instructions:

Prepare the Chicken:
- Clean the chicken thoroughly and rub it with lime juice to remove any unpleasant odor.
- Add the ayam seasoning mix to the chicken, mixing well. Add enough water to create a marinade. Let the chicken marinate until tender.

Cook the Chicken:
- Heat the oil in a frying pan over medium heat. Fry the marinated chicken until golden brown and crispy. Once cooked, remove from the oil and set aside.

Prepare the Sambal Ijo:
- Wash the green bird’s eye chilies, large green chilies, and garlic thoroughly.
- Fry the green chilies, bird’s eye chilies, and garlic in a hot pan just until they are wilted (do not overcook).
- Using a mortar and pestle, coarsely grind the fried ingredients together. Add salt and flavor enhancer to taste.

Combine and Serve:
- Place the fried chicken into the bowl with the sambal ijo. Gently smash and mix the chicken with the sambal to ensure it is well coated.
- Serve the Ayam Geprek Sambal Ijo with cucumber slices and cooked pakcoy on the side.
