Spicy Balado Eggs

Ingredients:

  • 5 large eggs
  • For the Spice Paste:
    • 5 shallots
    • 5 garlic cloves
    • 10 red chilies (optional, for extra heat)
    • 2 candlenuts
    • Salt, to taste
    • Totole (or bouillon powder), to taste

Instructions:

  1. Prepare the Eggs:

    • Begin by boiling the eggs until they are fully cooked. Once done, peel the eggs and set them aside. If you prefer a crispy texture, you can choose to lightly fry the peeled eggs in oil.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, and red chilies (if using). Add the candlenuts and a pinch of salt. Blend until you achieve a smooth paste.
  3. Cook the Paste:

    • Heat some oil in a skillet over medium heat. Add the spice paste to the hot oil and sauté until the aroma is released and the paste becomes fragrant.
  4. Combine and Season:
