Telur Balado Recipe

Ingredients:

  • 500 grams of hard-boiled eggs, peeled and scored
  • 2 kaffir lime leaves
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 100 ml water
  • 1 tablespoon cooking oil for sautéing

Spice Paste:

  • 3 red chilies
  • 5 bird’s eye chilies
  • 3 shallots
  • 3 cloves garlic
  • 1 block of palm sugar

Instructions:

  1. Begin by heating the cooking oil in a pan over medium heat. Once the oil is hot, add the spice paste and kaffir lime leaves. Sauté until fragrant, allowing the spices to release their aroma.

  2. Add the water, salt, and sugar to the pan, stirring to combine. Let the mixture simmer for a minute to meld the flavors.

  3. Gently add the peeled and scored eggs into the pan. Stir carefully to ensure the eggs are coated with the spicy sauce.

  4. Cook the eggs over low heat, allowing the liquid to reduce and the spices to infuse into the eggs. Continue cooking until the sauce has thickened and nearly evaporated, leaving a rich coating on the eggs.

  5. Remove from heat and transfer to a serving dish. Serve hot with steamed rice for a delicious and flavorful meal.
