Telor Balado Terasi Pedas

Ingredients

1 clove Bay Leaf (Daun Salam)
1 slice Galangal (Laos)
To taste Salt (Garam)
To taste Royco Seasoning
2 tsp Sweet Soy Sauce (Kecap Manis)
To taste MSG (Micin)
To taste Sugar (Gula)
To taste Shrimp Paste (Terasi)
For frying Cooking Oil (Minyak)

Ingredients for Blending

10 Bird’s Eye Chili (Cabe Rawit)
3 Shallots (Bawang Merah)
2 Garlic (Bawang Putih)
3 Candlenuts (Kemiri)
To taste Water (Air)

Instructions

  1. Boil the Eggs: Place the eggs in a pot of water and boil until fully cooked. Once cooked, allow them to cool, then peel the shells.

  2. Prepare the Base: In a separate pan, heat a little cooking oil over medium heat.

  3. Sauté Blended Ingredients: Add the blended ingredients (chili, shallots, garlic, and candlenuts) into the hot oil. Sauté until fragrant.

  4. Add Aromatics: Incorporate the bay leaf, galangal, seasoning, MSG, sugar, and shrimp paste. Stir to combine.

  5. Simmer: Pour in a little water and let the mixture simmer until it reaches a boil. Adjust seasoning to taste.

  6. Combine with Eggs: Once the sauce is aromatic and well-seasoned, add the peeled eggs. Stir gently to coat the eggs with the sauce.
