Spicy Balado Eggs with Tangy Chili Sauce

Sambal Balado Telur Bumbu Rebus

Ingredients:

  • 7 chicken eggs
  • 5 red shallots
  • 3 cloves of garlic
  • 15 red chilies
  • 15 green bird’s eye chilies
  • 3 tomatoes
  • 1/2 block of palm sugar
  • Oil, salt, and seasoning (such as Royco) to taste
  • A small amount of water

Instructions:

  1. Prepare the Eggs: Begin by boiling the chicken eggs until fully cooked. Once they are done, transfer them to a bowl of cold water to cool. After they have cooled, carefully peel off the shells.

  2. Fry the Eggs: Heat oil in a pan and fry the peeled eggs until they are slightly browned. Make sure to turn them occasionally for even browning. Set aside.

  3. Cook the Spices: In a separate pot, bring water to a boil and add the red chilies, green bird’s eye chilies, red shallots, garlic, and tomatoes. Cook until the vegetables are softened. Once cooked, remove from heat and set aside.

  4. Blend the Spices: Using a blender, blend the cooked chilies, shallots, garlic, and tomatoes until smooth.

  5. Sauté the Spice Mixture: Heat a bit of oil in a pan and sauté the blended spice mixture. Add the palm sugar (cut into small pieces) and a little water to help dissolve the sugar and clean out the blender. Cook the mixture until it becomes aromatic and starts to thicken.

  6. Combine Everything: Add the fried eggs to the pan with the spice mixture. Season with salt and Royco seasoning to taste. Stir well to ensure the eggs are evenly coated with the sambal.

  7. Serve: Once the sambal is well combined with the eggs and heated through, remove from heat. Serve hot and enjoy!
