Ingredients:
- 5 eggs (2 boiled, 3 fried)
- 2 blocks of white tofu (cut into medium cubes)
- 5 red chilies
- 15 bird’s eye chilies
- 5 shallots
- 5 cloves of garlic
- Salt, to taste
- MSG (optional), to taste
- Black pepper, to taste
- Royco seasoning, to taste
- Sugar, to taste
- Soy sauce, to taste
- Water, as needed

Prepare the Eggs: Begin by thoroughly cleaning and boiling 2 of the eggs until they are hard-boiled. If desired, you can also fry the boiled eggs later for added texture. For the remaining 3 eggs, fry them until the whites are crispy and golden brown, then set them aside.

Prepare the Spice Paste: While the eggs are boiling, prepare the spice paste. Combine the red chilies, bird’s eye chilies, shallots, and garlic in a mortar and pestle, grinding them into a smooth paste.

Fry the Tofu and Eggs: Heat oil in a pan and fry the tofu cubes until they are golden and crispy. Remove and set aside. In the same pan, fry the boiled eggs if you prefer them crispy, and then set them aside as well.

Cook the Spice Paste: In a clean wok or large pan, add a little oil and sauté the spice paste until it releases a fragrant aroma. Add a small amount of water to the paste to help it cook evenly and to allow the flavors to meld.
