Spicy Balinese Eggs with Kaffir Lime

Balinese Spiced Eggs (Telor Bumbu Bali)
Ingredients:
- 4 hard-boiled eggs, peeled
- For the Spice Paste:
- 4 cloves garlic
- 4 shallots
- 10 bird’s eye chilies
- 10 curly red chilies
 
- For Additional Flavoring:
- 1 thumb-sized piece of ginger, smashed
- 2 tablespoons Tropicana Slim soy sauce (or use regular soy sauce if not following a keto diet)
- A few kaffir lime leaves, roughly chopped
- Enough drinking water
- A pinch of salt
- Oil for sautéing

Heat a generous amount of oil in a pan over medium heat. Add the spice paste ingredients—garlic, shallots, bird’s eye chilies, and curly red chilies—and sauté until fragrant and golden brown. 
- 
Add a small amount of water to the pan to help the spices cook evenly. Stir well. 
- 
Gently add the peeled hard-boiled eggs to the pan. Stir to coat the eggs with the spice paste. 
- 
Season with a pinch of salt, and add the Tropicana Slim soy sauce (or regular soy sauce) and chopped kaffir lime leaves. Stir and adjust seasoning to taste. 
- 
Continue to cook until the eggs are well-coated and the flavors have melded together. 
- 
Remove from heat and transfer to a serving dish. 
- 
Serve warm and enjoy!
