Spicy Balinese Eggs with Kaffir Lime

Balinese Spiced Eggs (Telor Bumbu Bali)

Ingredients:

  • 4 hard-boiled eggs, peeled
  • For the Spice Paste:
    • 4 cloves garlic
    • 4 shallots
    • 10 bird’s eye chilies
    • 10 curly red chilies
  • For Additional Flavoring:
    • 1 thumb-sized piece of ginger, smashed
    • 2 tablespoons Tropicana Slim soy sauce (or use regular soy sauce if not following a keto diet)
    • A few kaffir lime leaves, roughly chopped
    • Enough drinking water
    • A pinch of salt
    • Oil for sautéing

Instructions:

  1. Heat a generous amount of oil in a pan over medium heat. Add the spice paste ingredients—garlic, shallots, bird’s eye chilies, and curly red chilies—and sauté until fragrant and golden brown.

  2. Add a small amount of water to the pan to help the spices cook evenly. Stir well.

  3. Gently add the peeled hard-boiled eggs to the pan. Stir to coat the eggs with the spice paste.

  4. Season with a pinch of salt, and add the Tropicana Slim soy sauce (or regular soy sauce) and chopped kaffir lime leaves. Stir and adjust seasoning to taste.

  5. Continue to cook until the eggs are well-coated and the flavors have melded together.

  6. Remove from heat and transfer to a serving dish.

  7. Serve warm and enjoy!
