Balinese Shredded Chicken (Ayam Suir Bali)

Ingredients:

  • 1/2 kg chicken breast (boiled beforehand)
  • 50 ml cooking oil

Spice Paste:

  • 1/4 kg red chilies
  • 1/2 tomato
  • 5 bird’s eye chilies
  • Salt, to taste
  • Palm sugar, to taste
  • 1 tsp roasted shrimp paste (terasi bakar)
  • Juice of 1/2 lime
  • 3 kaffir lime leaves

Instructions:

  1. Begin by boiling the chicken breast until tender, then shred it finely.

  2. Prepare the spice paste by grinding together red chilies, tomato, bird’s eye chilies, salt, palm sugar, roasted shrimp paste until smooth. Adjust seasoning as needed.

  3. Heat cooking oil in a pan. Once hot, add the spice paste. Cook until fragrant and the paste is partially cooked.

  4. Add the shredded chicken to the pan. Stir well to coat the chicken with the spice paste.

  5. Allow the flavors to meld together over medium heat until the chicken absorbs the spices. Add lime juice and kaffir lime leaves towards the end of cooking.
