Spicy Beef and Broccoli Stir-Fry with Straw Mushrooms

Broccoli Beef Stir-Fry

Ingredients:

  • 150 grams beef (I used inside round cut)
  • 1 head of broccoli
  • 1/2 onion, coarsely chopped
  • 5 cloves garlic, finely minced
  • 3 cm ginger, thinly sliced
  • 2 tablespoons cornstarch slurry
  • 2 tablespoons oyster sauce
  • 5 red bird’s eye chilies, sliced
  • 100 grams straw mushrooms

Instructions:

  1. Prepare the Beef: Slice the beef to your desired thickness. Begin by boiling the beef in water until it releases its juices. Once the juices are mostly evaporated, add one cup of hot water and continue boiling until the beef is tender and the water is mostly reduced. Reserve a small amount of the beef broth for later use. Pound the beef with a mortar and pestle to ensure it becomes tender.

  2. Blanch the Broccoli: In a pot of salted boiling water, cook the broccoli for about 4 minutes until it is bright green and tender-crisp. Remove the broccoli from the pot and immediately transfer it to a bowl of ice water to stop the cooking process. Drain and set aside.

  3. Prepare the Straw Mushrooms: Slice the straw mushrooms as desired. Rinse them thoroughly, then cook in salted boiling water for about 5 minutes. Drain and set aside.

  4. Sauté Aromatics: Heat a bit of oil in a pan over medium heat. Add the chopped onion, minced garlic, and sliced ginger. Stir-fry briefly until the onions become translucent and golden. Add the straw mushrooms and continue to cook until the mushrooms are tender and the onions are golden brown.

  5. Combine Ingredients: Add the cooked beef to the pan along with the reserved beef broth (about 1/2 cup). Stir well to combine. Add the oyster sauce, sliced bird’s eye chilies, and any remaining beef broth. Season with salt, pepper, and additional oyster sauce to taste.

  6. Finish the Dish: Incorporate the blanched broccoli into the pan and stir well. Pour in the cornstarch slurry and cook for an additional minute or two, until the sauce thickens and coats the ingredients. Taste and adjust seasoning as necessary.

  7. Serve: Once everything is well combined and heated through, your Broccoli Beef Stir-Fry is ready to serve. Enjoy it as a flavorful and satisfying main dish.
