Spicy Beef Tendon Soup (Sop Tetelan Sapi Pedas)

Ingredients

  • 150 grams beef tendon
  • 700 ml water
  • 1 carrot, cut into 2-inch pieces
  • 1 green tomato, quartered
  • 1/2 red tomato, quartered
  • 1 stalk green onion, chopped
  • 1 stalk celery
  • 1 inch ginger, crushed
  • 1/4 whole nutmeg
  • 8 red bird’s eye chilies, crushed
  • 4 green chilies, crushed
  • Salt and beef-flavored bouillon powder to taste
  • Fried shallots for garnish

For the spice paste:

  • 4 cloves garlic
  • 3 shallots

Preparation Steps

  1. Boil the Beef Tendon: Place the beef tendon in a pot with 700 ml of water. Bring it to a boil and cook until the beef tendon becomes tender. Add the crushed ginger and whole nutmeg during the boiling process to infuse the flavors.

  2. Prepare the Spice Paste: Blend the garlic and shallots into a smooth paste.

  3. Sauté the Spice Paste: Heat a small amount of oil in a pan and sauté the spice paste until it becomes fragrant and aromatic.

  4. Combine Ingredients: Add the sautéed spice paste to the pot with the beef tendon. Stir well to mix the flavors.

  5. Cook the Vegetables: Add the carrot pieces to the pot and cook until they become slightly tender.

  7. Add Remaining Ingredients: Add the quartered green tomato, crushed red bird’s eye chilies, crushed green chilies, chopped green onion, and celery to the pot. Cook for a short while until the soup reaches a boil and all ingredients are well integrated.

  8. Final Touch: Taste and adjust the seasoning if needed. Remove the soup from heat.

  9. Serve: Ladle the soup into bowls and garnish with fried shallots for an extra burst of flavor. For a fresh, zesty finish, add a squeeze of lime juice.
