Ingredients:

  • 6 small brinjals (eggplants)
  • 2 onions, chopped
  • Oil, as required
  • For Bharma Masala:
    • 12 cloves garlic, paste
    • 3 green chillies, paste
    • 1/2 teaspoon ginger, paste
    • 1/2 teaspoon red chilli powder
    • 1/2 teaspoon coriander powder
    • 1/4 teaspoon asafoetida
    • 1/2 teaspoon turmeric powder
    • 1 tablespoon coriander leaves, finely chopped
    • Salt, to taste

Preparation Time: 10 minutes
Cook Time: 45 minutes

Instructions:

  1. Prepare the Masala: In a bowl, mix together the ingredients for the masala (garlic paste, green chilli paste, ginger paste, red chilli powder, coriander powder, asafoetida, turmeric powder, and chopped coriander leaves).
  2. Prepare the Brinjals: Wash the brinjals thoroughly. Cut off the top part of each brinjal and make two cuts on the top (lengthwise), being careful not to cut all the way through the brinjal. This will create a pocket for the masala.
  3. Stuff the Brinjals: Fill each brinjal with the prepared masala and set them aside.
  4. Cook the Sabzi: Heat oil in a pan and add the chopped onions. Cook until the onions become soft. Then, add the stuffed brinjals to the pan and cook for about 2 minutes.
  5. Simmer: Cover the pan and cook the brinjals until they become soft, allowing the flavors to meld.
  6. Garnish and Serve: Once the brinjals are cooked, garnish the dish with finely chopped coriander leaves. Serve hot with Panchmel Daal, Boondi Raita, and Phulkas for a complete Rajasthani meal.
