Savory Egg Rolls Recipe

Ingredients:

  • 6 large eggs
  • 1 carrot, grated
  • 2 shallots, thinly sliced
  • 5 green chilies, chopped
  • Freshly chopped scallions, to taste
  • Freshly chopped celery, to taste
  • Salt, to taste
  • 1/2 tablespoon chili powder
  • 3 tablespoons butter

Instructions:

  1. Prepare the Egg Mixture:
    In a mixing bowl, combine the eggs, grated carrot, sliced shallots, chopped green chilies, scallions, celery, salt, and chili powder. Stir until all ingredients are well incorporated.

  2. Heat the Pan:
    Place a non-stick skillet or frying pan over medium heat and add the butter. Allow the butter to melt and become slightly bubbly.

  3. Cook the Egg Rolls:
    Pour a spoonful of the egg mixture into the pan, spreading it out into a thin layer. Cook until the edges begin to set and the bottom is golden brown, about 2 minutes. Gently roll the partially cooked egg into a log shape. Add a bit more of the egg mixture to the pan and continue to cook and roll until all of the egg mixture is used and each roll is fully cooked.

  4. Serve:
    Once cooked, remove the egg rolls from the pan and place them on a serving platter. These savory egg rolls are perfect for a quick and delicious meal or as a snack.
