Ingredients:

  • 3 cups chicken meat, cooked and chopped
  • 1 cup cheddar cheese, shredded
  • 8 ounces Velveeta cheese, cubed
  • 1 can cream of mushroom soup
  • 7 ounces canned green chilies, chopped
  • 1/4 cup onion, chopped
  • 1 can Ro-Tel tomatoes, chopped
  • 1 large bag Dorito chips

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Prepare the chicken by boiling and boning it. You’ll want to end up with chopped chicken meat. If you’re short on time, canned cooked chicken or pre-cooked chicken breasts/thighs can also be used. Save the broth for another recipe as it won’t be needed here.

  3. In a microwave-safe bowl, combine the Velveeta cubes, shredded cheddar cheese, cream of mushroom soup (without reconstituting it with milk), chopped green chilies, chopped onion, and the can of chopped Ro-Tel tomatoes.

  4. Microwave the mixture for 2 minutes, then remove and stir until well combined.

  5. In a large lasagna-sized pan, begin layering the ingredients. Start with a layer of Dorito chips, followed by a layer of chopped chicken, and then a layer of the cheese mixture. Repeat this layering process once more.

  6. Bake the assembled dish in the preheated oven for about 30 minutes, or until the cheese is melted, golden brown, and bubbly.

  7. Serve hot and enjoy the cheesy, spicy goodness of Chicken Dorito!
