Sauté the spice paste: Start by blending the red curly chilies, shallots, garlic, roasted candlenuts, ginger, kencur, and roasted shrimp paste into a smooth paste. Heat oil in a pan and sauté the spice paste over medium heat until fragrant. Add the kaffir lime leaves and bruised lemongrass stalks. Continue stirring until the leaves soften and release their aroma.
